Ducasse Institute Philippines Holds Graduation Dinner for Youth with a Future Scholars

Three months after their culinary training at Ducasse Institute Philippines, the10 Youth with a Future scholars from Tuloy Foundation had their graduation ceremony at Enderun Colleges’ Restaurant 101.

An initiative of Ducasse Education in France and Ducasse Institute Philippines at Enderun Colleges, Youth with a Future supported the culinary center of Tuloy Foundation. After holding a fundraising event by way of a charity dinner and auction held last March, ten scholars were chosen to have a 3-month culinary training at Ducasse Institute Philippines.

Chef Cheong Yan See, Culinary Head of Enderun Colleges, assigned the scholars to prepare the graduation dinner. The four-course menu consisted of Seafood Vera Cruz, Assorted Cold Seafood, Tomato Syrup; Beef Consommé Celestine, Double Beef Consommé with Fine Herb Crepe; Moroccan Spiced Beef Tenderloin, Carrot, Chermoula, Couscous; Menton Lemon Tart.

Among the guests were the donors and supporters of Youth with a Future, including David Batchelor, Managing Director of Raffles and Fairmont Makati, a long-time supporter of Tuloy.  Also in attendance were Dr. Edgardo Rodriguez, President of Enderun Colleges and Fr. Rocky Evangelista, founder of Tuloy Foundation.

During his speech, Fr. Evangelista expressed his gratitude to the generous donors who invested in the scholars. He emphasized his goal to eradicate the society of homeless children by giving them opportunities to pursue their dreams.

After the dinner, Chef See formally announced that the scholars were successfully placed for internship at Vask, Chateau 1771, Soprano Restaurant of the City of Dreams, and Raffles and Fairmont Makati. He added that four of the scholars would go to Four Seasons Resort Dubai at Jumeirah Beach. “Simon Casson, Regional Vice President and General Manager of Four Seasons Dubai visited Enderun Colleges for an entirely different purpose when he saw the Tuloy scholars. He was impressed and decided to take four of them under his wing,” Chef See said.

Ducasse Education and Ducasse Institute Philippines decided to take in another batch of scholars next year, since Youth with a Future is now an annual initiative between both institutions.
